Greek Turkey Meatballs
Ingredients
1.5 lb ground turkey
4 oz feta cheese, crumbled
1 cup spinach, roughly chopped
1 cup almond flour
1 egg
2 tsp dried oregano
1/2 tsp red pepper flakes
1/2 tsp sea salt
black pepper to taste
Instructions
Preheat oven to 375º. Combine meatball recipes in a large bowl. Using wet hands, about 2 tbsp of the mixture into meatballs, and place on a parchment paper lined baking sheet.
Bake meatballs for 20 minutes, or until completely cooked through. The meatballs should be firm to the touch.
Serve over tzatziki

MEAL PREP NOTE: Allow the meatballs to cool and place in a tupperware container with a tight-fitting lid. Freeze for up to three months. Thaw in the fridge overnight. Place thawed meatballs in the oven and bake for 10-15 minutes, until warmed through.
