Greek Turkey Meatballs

Ingredients

  • 1.5 lb ground turkey

  • 4 oz feta cheese, crumbled

  • 1 cup spinach, roughly chopped

  • 1 cup almond flour

  • 1 egg

  • 2 tsp dried oregano

  • 1/2 tsp red pepper flakes

  • 1/2 tsp sea salt

  • black pepper to taste

  • Tzatziki

 
 

Instructions

  1. Preheat oven to 375º. Combine meatball recipes in a large bowl. Using wet hands, about 2 tbsp of the mixture into meatballs, and place on a parchment paper lined baking sheet.

  2. Bake meatballs for 20 minutes, or until completely cooked through. The meatballs should be firm to the touch.

  3. Serve over tzatziki

MEAL PREP NOTE: Allow the meatballs to cool and place in a tupperware container with a tight-fitting lid. Freeze for up to three months. Thaw in the fridge overnight. Place thawed meatballs in the oven and bake for 10-15 minutes, until warmed through.
