Homemade Mayo
Ingredients
2 large eggs
1 tbsp lemon juice
1/2 tsp white wine vinegar
1/2 tsp dijon mustard
1/4 tsp sea salt
1 cup avocado oil
Instructions
Combine ingredients in a tall, heavy bottomed jar.
Place an immersion blender at the bottom of the jar. Blend at the bottom for 30 seconds to 1 minute, until it begins to turn light and fluffy. Start to slowly bring the immersion blender to the top of the mixture while blending. It should form and thicken.
Store in an airtight container in the fridge for 1-2 weeks.
