Tzatziki

Ingredients

  • 16 oz full fat greek yogurt

  • 2 medium cucumbers 

  • 1 tbsp lemon juice 

  • 1 clove garlic, minced

  • 2 tbsp extra virgin olive oil 

  • 1/2 tsp sea salt + 1/2 tsp sea salt

  • 2 tbsp freshly chopped herbs like dill, mint, or parsley (optional)

 
 

Instructions

  1. Using the largest side of a grater, grate the cucumbers into a bowl. Sprinkle with 1/2 tsp sea salt. Gently mix. Allow to sit for 30 minutes.

  2. When the 30 minutes is up begin squeezing as much liquid as possible out of the cucumbers. You can wrap it in a tea towel and squeeze or just use your hands. Place the drained cucumbers in another bowl.

  3. To the cucumbers add the greek yogurt, lemon juice, garlic, olive oil, and remaining salt. Stir until combined. Enjoy!
