Chicken Souvlaki

Ingredients

  • 1 1/2 lbs chicken breast, cut into 1 1/2” pieces

  • 6-8 cloves garlic

  • juice of 1 lemon

  • 1/4 cup extra virgin olive oil

  • 1 tbsp white wine vinegar

  • 1 tbsp dried oregano

  • 1 tsp paprika

  • 1 tsp dried rosemary

  • 1 tsp sea salt

  • 1 tsp black pepper

  • 2 bay leaves

 
 

Instructions

  1. In a blender or small food processor combine garlic, lemon juice, extra virgin olive oil, white wine vinegar, oregano, paprika, rosemary, and salt and pepper and blend until smooth.

  2. In a bowl add your chicken and bay leaves. Pour the marinade over the chicken and toss. Marinate in the fridge for two hours. If you don’t have time, marinate for at least 30 minutes. If using wooden skewers, soak in a dish of water for 30 minutes before grilling.

  3. Preheat your grill to medium heat. Alternately, heat a grill pan over medium heat. Brush your grill with avocado oil.

  4. Skewer your chicken breasts. You can also add veggies if you’d like.

  5. Place on the grill and close the lid, grilling for 5-6 minutes. Flip, and repeat on the other side, until the chicken reaches a temperature of 165º. Remove from the grill and allow to rest for 3-5 minutes. Remove from the skewers and serve.
