Curried Chickpeas

Ingredients

  • 3 cups chickpeas

  • 1 bunch cilantro, finely chopped

  • juice of 1 lime

  • 1/4 cup extra virgin olive oil

  • 1 tbsp thai red curry powder

  • 1 tsp turmeric

  • 1/2 tsp sea salt

  • 1/4 tsp freshly cracked black pepper

 
 

Instructions

  1. Whisk together olive oil, lime juice, curry powder, turmeric, salt and pepper.

  2. In a large bowl combine chickpeas and cilantro. Pour dressing over and toss. Chill in the fridge for at least 30 minutes. Serve as is, on toast, or in a salad.
