Curried Chickpeas
Ingredients
3 cups chickpeas
1 bunch cilantro, finely chopped
juice of 1 lime
1/4 cup extra virgin olive oil
1 tbsp thai red curry powder
1 tsp turmeric
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper
Instructions
Whisk together olive oil, lime juice, curry powder, turmeric, salt and pepper.
In a large bowl combine chickpeas and cilantro. Pour dressing over and toss. Chill in the fridge for at least 30 minutes. Serve as is, on toast, or in a salad.
