Mozzarella Stuffed Turkey Meatballs

Ingredients

  • 1.5 lb ground turkey

  • 1/2 cup almond flour

  • 1 egg

  • 2 tbsp finely chopped fresh thyme (or sub 1 tsp dried thyme)

  • 2 cloves garlic, grated

  • 1/4 red onion, grated

  • 1/2 tsp sea salt

  • freshly cracked black pepper, to taste

  • 18-24 mozzarella pearls

 
 

Instructions

  1. Preheat oven to 375º. Combine meatball recipes in a large bowl. Using wet hands, about 2 tbsp of the mixture into meatballs, and place on a parchment paper lined baking sheet.

  2. Press a mozzarella pearl into each meatball, rerolling to close the meatball up. Return to the baking sheet.

  3. Bake the meatballs for 20 minutes. Meatballs should be firm. Remove from the oven.

  4. Serve with your favorite sauce over pasta or with a salad!

MEAL PREP NOTE: Allow the meatballs to cool and place in a tupperware container with a tight-fitting lid. Freeze for up to three months. Thaw in the fridge overnight. Place thawed meatballs in the oven and bake for 10-15 minutes, until warmed through. Alternately, add to your favorite sauce in a sauce pan and bring to a simmer, cover, and steam meatballs for 10-15 minutes, until warmed through.

SUBSTITUTION NOTE: if you don’t want to use fresh herbs sub with dried herbs. For every one 1 tbsp of fresh herbs use 1 tsp dried herbs.
