Marinated White Bean Salad

Ingredients

  • 3 cups white beans, like cannellini or butter beans

  • 1/2 red onion, finely diced

  • 1 punch parsley, finely chopped

  • 1 lemon, zested and juiced

  • 2 cloves garlic, grated

  • 1 tbsp oregano, finely chopped (optional)

  • 1/3 cup extra virgin olive oil

  • sea salt and freshly cracked black pepper, to taste

 
 

Instructions

  1. Combine all ingredients in a large bowl and toss. Marinate in the fridge for at least 30 minutes but ideally an hour or two. The flavors will intensify as it marinates.

  2. Serve as is or with an animal protein such as grilled chicken, steak, or fish. This is also great on top of greens.

MEAL PREP TIP: white beans will last in an airtight container in the fridge for 5 days. For maximum freshness, toss with half the dressing and then the remaining dressing a half hour before serving.
