Stuffed Pepper Skillet
Ingredients
- 1 lb grass-fed ground beef 
- 1 onion, diced 
- 4 cloves garlic, finely chopped 
- 2 bell peppers, diced 
- 3/4 cup white rice, rinsed 
- 2 cups broth 
- 14 oz diced tomatoes 
- 2 tbsp tomato paste 
- 1/2 tsp Italian seasoning 
- 1/2 tsp sea salt (omit if your broth has salt) 
- freshly cracked black pepper, to taste 
- 1 cup hard goat cheese, mozzarella or cheddar 
Instructions
- Heat a large pan with a lid over medium heat. Add the ground beef to the pan along with the onion and garlic. Break up the beef as it cooks. 
- Once the beef is browned and the onions have softened, add the peppers, rice, broth, tomatoes, tomato paste, Italian seasoning, salt, and pepper. Stir to combine. 
- Bring to a boil, reduce to a simmer, and cook, covered, for 20 minutes, or until the rice has absorbed most of the liquid. 
- Sprinkle grated cheese over the skillet and cover, cooking for an additional 5 minutes, or until the cheese is melted. Serve!
