Stuffed Pepper Skillet
Ingredients
1 lb grass-fed ground beef
1 onion, diced
4 cloves garlic, finely chopped
2 bell peppers, diced
3/4 cup white rice, rinsed
2 cups broth
14 oz diced tomatoes
2 tbsp tomato paste
1/2 tsp Italian seasoning
1/2 tsp sea salt (omit if your broth has salt)
freshly cracked black pepper, to taste
1 cup hard goat cheese, mozzarella or cheddar
Instructions
Heat a large pan with a lid over medium heat. Add the ground beef to the pan along with the onion and garlic. Break up the beef as it cooks.
Once the beef is browned and the onions have softened, add the peppers, rice, broth, tomatoes, tomato paste, Italian seasoning, salt, and pepper. Stir to combine.
Bring to a boil, reduce to a simmer, and cook, covered, for 20 minutes, or until the rice has absorbed most of the liquid.
Sprinkle grated cheese over the skillet and cover, cooking for an additional 5 minutes, or until the cheese is melted. Serve!
