One Pan Cashew Chicken Skillet

Ingredients

Chicken + Veggies

  • 2 chicken breasts, cut into cubes

  • 1/2 tsp sea salt

  • 1 tbsp avocado oil

  • 1 tbsp grated garlic

  • 4 cups broccoli florets

  • 1 red bell pepper, thinly sliced

  • 1 cup snap peas

  • 1 cup shredded carrots

  • 1/2 cup cashews

  • 1 bunch green onions

Sauce

  • 1/2 cup almond butter

  • 2 tbsp tamari

  • 2 tbsp water

  • 1 tbsp sesame oil

  • 1 tsp ground ginger

 
 

Instructions

  1. Heat avocado oil in a large saucepan with a lid. Once hot, add chicken and brown on all sides until cooked through about 5-7 minutes. Remove from pan and set aside.

  2. Add garlic to the pan followed by the broccoli, bell pepper, and snap peas. Stir, ensuring the garlic is coating the vegetables. cover, and cook for about 5 minutes, until vegetables are cooked halfway.

  3. Whisk together sauce ingredients in a small bowl. Reduce heat to medium. Add in the carrots, green onions, chicken, and sauce and stir, cooking for another couple of minutes, until the sauce has thickened and the veggies are cooked through.

  4. Stir in cashews and serve.
