Mediterranean Tuna Salad

Ingredients

Dressing

  • 1/4 cup extra virgin olive oil

  • juice of 1 lemon (~2 tbsp)

  • 1 tbsp red wine vinegar

  • 1 clove garlic

  • 1 tbsp dried oregano

  • pinch red pepper flakes

Salad

  • 4 4.5 oz cans skipjack tuna, drained and flaked with a fork

  • 1 cup chickpeas

  • 1 bell pepper, diced

  • 1 small red onion, diced

  • 1 cup cherry tomatoes, halved

  • 1 cup parsley, finely chopped

  • sea salt, to taste

 
 

Instructions

  1. Combine salad dressing ingredients in a jar. Use and immersion blender or food processor, blend until the mixture is emulsified. Set aside.

  2. Combine salad ingredients in a large bowl. Add dressing and toss until combined. Serve!

MEAL PREP NOTE: Mediterranean tuna salad will stay fresh in the fridge for 3-4 days. For maximum freshness, toss with half the dressing and store the remaining dressing separately, adding just before serving.
