Mediterranean Tuna Salad
Ingredients
Dressing
1/4 cup extra virgin olive oil
juice of 1 lemon (~2 tbsp)
1 tbsp red wine vinegar
1 clove garlic
1 tbsp dried oregano
pinch red pepper flakes
Salad
4 4.5 oz cans skipjack tuna, drained and flaked with a fork
1 cup chickpeas
1 bell pepper, diced
1 small red onion, diced
1 cup cherry tomatoes, halved
1 cup parsley, finely chopped
sea salt, to taste
Instructions
Combine salad dressing ingredients in a jar. Use and immersion blender or food processor, blend until the mixture is emulsified. Set aside.
Combine salad ingredients in a large bowl. Add dressing and toss until combined. Serve!

MEAL PREP NOTE: Mediterranean tuna salad will stay fresh in the fridge for 3-4 days. For maximum freshness, toss with half the dressing and store the remaining dressing separately, adding just before serving.
