Meal Prep Chorizo Breakfast Burritos
Ingredients
12 oz chorizo breakfast links, cut in half lengthwise then sliced
10 eggs
1 red bell pepper, diced
1/2 yellow onion, diced
1 jalapeno, seeded and diced
2 tsp avocado oil
1 tbsp taco seasoning
6 carb balance tortillas (I use Mission Whole Wheat but Siete GF Almond Flour are also great for these)
Instructions
Heat a large pan over medium heat. Once hot, add the chopped chorizo to the pan, stirring occasionally, until slightly browned and some of the fat has been released, about 3-5 minutes.
Add onion, bell pepper, and jalapeno to the pan, stirring occasionally, until veggies have softened, an additional 5 minutes. Once the veggies are soft, remove to a bowl and set aside.
Whisk together eggs in a large bowl. Add the avocado oil to the same pan the sausage and veggies were just cooking in. Once hot, pour in the eggs and sprinkle with taco seasoning, using a wooden spoon to scramble. You want the eggs to be softly scrambled, so they do not overcook when you reheat them. Remove to a bowl.
Heat a clean pan over medium-low heat. Working in batches, add a tortilla to the pan and heat for 20 seconds, flip, and heat another 20 seconds. Remove to a clean workspace. Add 1/6 of the meat and veggie mixture and 1/6 of the scrambled eggs to the bottom of the tortilla.
Roll up the bottom part of the tortilla to cover part of the contents. Then, fold in the left and right sides. Roll up from the bottom, keeping the sides tucked in, until a neat cylinder is formed. Place on a piece of foil or parchment paper and wrap until sealed.

MEAL PREP NOTE:
FREEZER TO OVEN (BEST RESULTS): preheat oven to 425. Bake wrapped burritos for 45 minutes, turning halfway. Carefully remove the foil and bake uncovered for 5 minutes, until browned, allow to cool for 2 minutes before serving.
THAW OVERNIGHT IN FRIDGE (BEST RESULTS): preheat oven to 425. bake for about 20 minutes, turning halfway. Bake uncovered for 5 minutes or until browned. Allow to cool for 2 minutes before serving.
FREEZER TO MICROWAVE (LEAST FAVORITE RESULTS): remove the burrito from the foil and place on a microwave-safe dish, cover with a paper towel, and microwave for 1 minute. Flip the burrito, then microwave for an additional 1 to 1 1/2 minutes. Let cool for 2 minutes before serving.
