Healthy Coleslaw
Ingredients
1/2 medium head green cabbage, shredded
1/2 small head purple cabbage, shredded
2 large carrots, grated
1/2 cup nonfat plain greek yogurt
1/4 cup avocado mayo
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp olive oil
1 clove garlic, grated
1/2 tsp sea salt
black pepper, to taste
Instructions
Whisk together the yogurt, mayo, vinegar, maple syrup, olive oil, salt, and pepper until smooth. Set aside.
Combine your shredded cabbage and carrots in a bowl. Fold in the dressing and allow to sit for 30 minutes in the fridge. Enjoy!
