Grilled Garlic Butter Steak Bites with Sweet Potato and Squash
Ingredients
10 oz sirloin streak, cut into bite-sized pieces
1 tbsp avocado oil
4 tbsp butter
8 cloves garlic, minced
1/4 cup fresh herbs of your choice (I used oregano)
1 tsp sea salt
freshly cracked black pepper, to taste
1 large sweet potato, sliced in 1/4” thick slices lengthwise
1 zucchini, quartered
1 summer squash, cut into 2-3” pieces
2 tbsp feta, crumbled
Instructions
Turn your grill to medium-high heat. Place your cast iron skillet on the grill for 10 minutes to preheat. Be very careful handling the cast iron after this point as it will be very hot.
Brush your sweet potatoes and squash with avocado oil and sprinkle with salt and pepper. Place sweet potatoes directly on the grill and cook for 8 minutes per side, cooking until they can be easily pierced with a fork.
Place the squash on the grill once the sweet potatoes have cooked for 8 minutes and cook for 4 minutes on each side, or until tender.
Add avocado oil to the cast iron skillet, once hot, add the steak. Cook for 2 minutes without moving the steak. You want a nice sear. Stir the steak a bit and cook for another 2 minutes on the other side. Once your steak is cooked to your desired doneness, remove the cast iron from the heat.
Remove steak bites to a cutting board to rest. To the hot cast iron add the butter. Once melted add the garlic and cook until fragrant, about a minute, but keep a watchful eye so the garlic does not burn.
Add the steak and herbs to the butter and toss to coat. Toss your grilled vegetables with the crumbled feta and serve with the steak bites!
