Greek Meatballs with Whipped Feta and Cucumber Salad
Ingredients
Meatballs
1 1/3 lb ground beef
1/2 red onion, finely diced
3 cloves garlic, minced
2 eggs
1/2 cup almond flour
2 tbsp fresh mint, finely chopped
1 tsp sea salt
1/2 tsp dried basil
1/2 tsp dried dill
Cucumber Salad
1 cucumber, diced
1 pint cherry tomatoes, diced
1/4 red onion, thinly sliced
2 tbsp fresh oregano, chopped
juice of 1 lemon
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil
salt and pepper, to taste
Whipped Feta
8 oz feta
1/2 cup nonfat plain greek yogurt
1/2 tbsp honey
2 tbsp extra virgin olive oil
zest of 1 lemon
Instructions
Meatballs
Preheat oven to 375º.
Combine meatball ingredients in a large bowl and use your hands to mix until well combined. Form into golfball-sized meatballs and place on a parchment paper lined baking tray. Bake for 18 minutes, or until cooked through.
Cucumber Salad
While the meatballs cook, combine cucumber salad ingredients in a bowl. Refrigerate until ready to serve.
Whipped Feta
Combine ingredients in a food processor. Blend until smooth.
Dollop feta onto a plate and spread until smooth. Top with meatballs and cucumber salad and serve.
