Greek Meatballs with Whipped Feta and Cucumber Salad

Ingredients

Meatballs

  • 1 1/3 lb ground beef

  • 1/2 red onion, finely diced

  • 3 cloves garlic, minced

  • 2 eggs

  • 1/2 cup almond flour

  • 2 tbsp fresh mint, finely chopped

  • 1 tsp sea salt

  • 1/2 tsp dried basil

  • 1/2 tsp dried dill

Cucumber Salad

  • 1 cucumber, diced

  • 1 pint cherry tomatoes, diced

  • 1/4 red onion, thinly sliced

  • 2 tbsp fresh oregano, chopped

  • juice of 1 lemon

  • 1 tbsp red wine vinegar

  • 2 tbsp extra virgin olive oil

  • salt and pepper, to taste

Whipped Feta

  • 8 oz feta

  • 1/2 cup nonfat plain greek yogurt

  • 1/2 tbsp honey

  • 2 tbsp extra virgin olive oil

  • zest of 1 lemon

 
 

Instructions

Meatballs

  1. Preheat oven to 375º.

  2. Combine meatball ingredients in a large bowl and use your hands to mix until well combined. Form into golfball-sized meatballs and place on a parchment paper lined baking tray. Bake for 18 minutes, or until cooked through.

Cucumber Salad

  1. While the meatballs cook, combine cucumber salad ingredients in a bowl. Refrigerate until ready to serve.

Whipped Feta

  1. Combine ingredients in a food processor. Blend until smooth.

  2. Dollop feta onto a plate and spread until smooth. Top with meatballs and cucumber salad and serve.
