Freezer Meatballs
Ingredients
2 lb ground beef
1 yellow onion, diced
4 cloves garlic, grated
1/2 cup parmesan, grated
2 eggs
2/3 cup coconut flour (can sub with 2 cups almond flour or breadcrumbs)
1 tbsp dried oregano
large pinch red pepper flakes
Instructions
Preheat oven to 375ºF.
In a large bowl, combine ingredients for the meatballs. With wet hands, shape about 2 tablespoons of the mixture into meatballs and place them on a parchment-lined baking sheet.
Place the meatballs in the oven and bake for 20 minutes, or until fully cooked and firm to the touch.
Allow the meatballs to cool for about 15 minutes, then transfer them to another baking sheet or tray in a single layer. Place in the freezer for at least 1 hour to flash-freeze them—this keeps them from sticking together in storage. Transfer to a container or freezer bag and store in the freezer for up to three months.
