Burger Bowls with Crispy Fries
Ingredients
Burger + Fillings
1 lb ground beef
pinch sea salt
pinch black pepper
pinch garlic powder
4 cups romaine lettuce, chopped
1 pint cherry tomatoes, halved
1/2 red onion, thinly sliced
1 avocado, sliced
Crispy Fries
2-3 large potatoes, sliced into fry shapes
1 tbsp avocado oil
1/2 tsp sea salt
1/2 tsp nutritional yeast, optional
1/4 tsp black pepper
Special Sauce
1/4 cup avocado mayo
2 tbsp sweet pickle relish
1 1/2 tbsp ketchup
1 tbsp dijon mustard
1/2 tsp garlic powder
pinch red pepper flakes
water to thin, if needed
Instructions
Crispy Fries
Place the sliced potatoes into a bowl of cold water, making sure they are submerged, for 30 minutes. This helps remove some of the starch and makes the fries extra crispy. You can skip this step but if you have the time I highly recommend it.
Preheat oven to 400º.
Remove the potatoes from the water and pat dry. Toss with avocado oil, salt, pepper, and nutritional yeast. Lay in an even layer on a parchment paper-lined baking sheet, trying to make sure the fries don’t overlap.
Bake in the oven for 30-35 minutes until beginning to brown. Turn the oven to broil and broil for an additional 5 minutes for extra crispy fries!
Special Sauce
In a bowl, whisk together the avocado mayo, ketchup, mustard, and relish. Add a tsp of water at a time to thin to your desired consistency. Set aside.
Burger Bowls
Heat a large skillet over medium heat. Add beef and brown, breaking up with a wooden spoon as the meat cooks. Sprinkle with a pinch of salt, pepper, and garlic powder.
Assemble bowls with a quarter of each of the following: romaine, cherry tomatoes, red onion, avocado, ground beef, and fries. Drizzle with the special sauce and serve!
